Las especias, trate de usarlas frescas si es que es posible, el sabor es incomparable, por ejemplo yo usé jengibre en polvo porque no tenía a mano el fresco, úselo fresco si es posible.

- 1 taza arroz integral
- 1 cucharada aceite de oliva
- 1/2 taza cebolla picada
- 1 ajo picado
- 1/3 taza pimientos rojos cortados en cuadritos
- 1/3 taza pimientos verdes cortados en cuadritos
- 1 cucharadita tomillo fresco picado
- 1 taza agua
- 2 tazas leche de coco
- 3/4 cucharadita sal
- 1 taza porotos negros cocinados

- Cortar y medir los ingredientes.
Secar las alitas de pollo con papel toalla.
Poner todas las especias en una licuadora y hacer una pasta suave.
Sazonar las alitas de pollo y dejar a marinar por 1 hora a temperatura ambiente o 3 horas en el refrigerador.
Poner las alitas de pollo en una bandeja de hornear y cocinar en el horno a temperatura alta, aproximadamente 1 hora para dorar. Si desea también puede hacerlas a la parrilla.


- PREPARACIÓN DEL ARROZ
En una olla pequeña calentar el aceite y sofreír la cebolla, ajo, pimientos y tomillo juntos.
Agregar el arroz y dorar un poquito.
Añadir el agua, leche de coco, sal y hervir sin que se rebalse, bajar el fuego y cocinar lentamente hasta que el agua sea absorbida y arroz blando. Agregar los porotos negros cocinados y revolver
- Servir las alitas con el arroz.
