Ir incorporando el caldo caliente de a poco, apenas tiene que tapar el arroz no hay que ahogarlo. esperar hasta que sea absorbido cada vez, recién en ese momento volver a colocar caldo, repetir este paso las veces que sea necesario. (Le podes agregar azafrán o condimento para arroz o simplemente dejarlo así)
  6. Cuando el arroz esté al dente Condimentar con el fuego apagado o fuera del fuego. Agregar la manteca, Incorporar el queso de rallar. Revolver hasta que se emulsione toda la manteca (Este proceso se llama mantecura es lo que termina de darle cremosidad, la principal característica del risotto). Servir
