- El boquerón queda abierto en dos, único por la aleta dorsal. En la pescadería no la suelen quitar, a mí sí me gusta quitarla y se quedan los dos lomos limpios. Debajo de un chorrito fino de agua, limpiamos de sangre y escamas. Colocamos en una bandeja de horno con papel vegetal y unas gotas de aceite para que no se pegue


- Este proceso lo repetimos con todos los boquerones. Después, añadimos en el espacio que quede los pimientos de Padrón lavados. Añadimos sal a todo y otro poquito de aceite. Metemos en horno a 180°, arriba y abajo, durante 5-10 min. Si os gustan más bien crudos, mejor 5 min y si os gustan hechos 10 min. Los pimientos generalmente son 15 min. Podemos sacar, servir el pescado y meter 5 min más los pimientos con el horno apagado, aprovechando el calor que queda.
