La base es una sopa de ajo o sopa castellana, pero el caldo que se usa es un fumet de pescado y mariscos, digno de usarse como entrante en una comida de fiesta. Es una sopa de sabor increíble. Recomiendo añadir unas chirlas o almejas, en esta ocasión yo no puse.

Para ello, rehoga con aceite de oliva virgen en la olla las verduras, media cebolla, dos ajos, una zanahoria, medio pimiento verde y un cuarto de rojo, medio nabo, medio puerro, un trozo de apio, un tomate de pera, el perejil y cilantro fresco...etc, todas las verduras que te apetezca poner, aprovecha los trozos que tengas sobrantes en la nevera. También añade las cáscaras de pelar los langostinos crudos. Una vez dorado añade litro y medio de agua, hervir.
  2. Tener preparado las anillas cortadas a la mitad y los langostinos pelados y limpios del nervio central
  3. En otra olla, con aceite de oliva, dorar el pan cortado en cubitos (yo he usado pan casero hecho con masa madre) y tener picado los 5 ajos (usamos 2 en el caldo). Una vez dorado el pan, echar el ajo y cuando empiece a dorar también, echar el pimentón, si se quiere ñora picada también
  4. Sin dejar que se queme, verter los langostinos y las anillas, rehogar.
  5. Una vez rehogado, colar el caldo exprimiendo al máximo la sustancia de verduras y huesos de rape y cáscaras de langostinos (una opción es batir la mitad del caldo con todo lo restante y luego colarlo, le dará más sabor y consistencia, pero se tarda más)
  6. Verter 50 gr de fideos a la sopa y hervir 5-6 minutos más. Una vez el fideo está hecho apagar y dejar reposar 5 minutos antes de servir. Listo para disfrutar de esta poderosa sopa de ajo con marisco, su sabor es increíble y no deja indiferente a nadie.
