- Con los cuerpos y cabezas de las gambas las añadimos a un cazo con 3 vasos de agua hervir 7 min triturar y colar, los caldos de almejas y gambas los añado a un fumet que tenía preparado anteriormente con pescado de roca, pimentón laurel, cebolla, zanahorias sal.
- En una cacerola Honda, añadimos las guindillas y los ajos, cuando se doren retirar, añadimos el bogavante con pimienta y sofreír un poco y retirar.

- Sofrito con cebolla, pimiento r, y 3 tomates de colgar rallados la carne de ñora 2 cucharaditas, cuando el sofrito este caramelo, añadimos sal pimienta molida, los calamares troceados, ajo y perejil picados, cuando estén los calamares añadidos el coñac y flambeamos.

- Añadimos el arroz, 1 taza y media de café con leche es mi medida para 3 que repitan😅,los 2 litros de fumet, a la que hierve añadimos el bogavante, gambas almejas rectifica de sal, 12 min y 5 de reposo y a disfrutarlo!!
